With Induction hobs the elements electronics powers a coil that produces a high frequency electromagnetic field, which penetrates the metal of the ferrous cooking vessel and sets up a circulating electric current which generates the heat. The heat is generated in the pan and is transferred to the food contained within. Induction hobs are 90% efficient (electric is 47%, gas is 40%). Induction hobs are therefore more environmentally friendly, consuming half the electricity of the next most efficient hob. It heats up 1/2 litre of water in less than 1/2 the time of the next fastest hob. The surface temperature reaches 81°C when other electric hobs can reach up to 410°C.
Always use the correct size pan. If you are using a small pan, then use a smaller burner. The use of a pan lid when boiling the contents of the pan will make it come to the boil quicker, thus reducing the amount of electricity/gas used.
